Blue Mint Buffalo Cauliflower

Whether you’re needing to bring a special app for a girls night, or you’re hosting a football viewing party, this easy Blue Mint Buffalo Cauliflower will hit every button for you. It is loaded full of colorful green herbs like parsley, cilantro, green onions, and my favorite- MINT! You would never think to throw mint together with a buffalo edge, but once you try this, there is no going back. I made it as a little platter just for my kids and hubby to snack on when they got home from their sporting events on this sunny, fall Saturday afternoon, while the Minnesota Football game was playing in the background. Making the most utterly perfect afternoon. This recipe was inspired by a restaurant styled buffalo appetizer that you would find maybe even at the state fair… but it will leaving you feeling so much healthier than one that you would order from the menu! It is absolutely bursting with flavor in all the ways that make you FEEL GOOD.

INGREDIENTS
1 Bunch Flat Leaf Parsley
1 Bunch Green Onions
1 Bunch Fresh Mint Leaves
1 Bunch Cilantro
1 Tablespoon Bob’s Redmill gf 1:1 Flour
12.5 oz Mild Buffalo Sauce
6 Cups Cauliflower
6 oz Blue Cheese Crumbles
4 oz Tzatziki Sauce
INSTRUCTIONS
Preheat oven to º450
Line Baking Sheet With Unbleached Parchment Paper
In a Large Mixing Bowl, Combine Cauliflower Florets and Buffalo Sauce and mix until well combined
Sprinkle flour and mix again
Spread onto baking sheet and bake until golden brown (about 18 mins)
Transfer cauliflower onto a serving platter and generously spread herbs and blue cheese crumbles on top
Serve and Enjoy!
