Olympic Inspired Norwegian Cocoa Pancakes
Beautiful and flavorful Olympic-inspired Norwegian Cocoa pancake stacks. These might be the most beautiful and easy breakfast you will ever make for yourself or someone you love! I must say first, these aren’t totally olympic- inspired per say, in the way that they are going to make you obtain the athletic ability to go uphill on thin skies under 5 mins per mile, but these are olympic inspired simply because they are most obviously the close cousin to your traditional Swedish pancake. All thin and melty, buttery but still holding nicely together… With the flavorful eggy tang, but always leaving you to want more kind of feeling. Does this resonate with you?!
Some people watch the olympic athletes and think, Hmm what sport would I participate in if i was an athlete in Milan? Well personally, I was watching those cross country skiiers the other day, and a thought that crossed my mind was I wonder if they have cocoa pancakes in Norway? Like those really good Swedish ones you can only get at the Original Pancake House, but like cocoa style. Anyway, the Norwegian Cocoa Pancakes were born that evening as I was onlooking those hungry and exhausted athletes, and I am here to share all the dirty cocoa details with you.
Okay let’s just keep these really simple, because THEY ARE! The suggestions I have are to 1000% you need to blend the ingredients with some sort of high powered blender or mixer and blend until really smooth. The second thing I will say here, is the higher the quality of ingredients, the better these will taste. Like creamy milk, thick butter, deep dark cocoa powder, etc. Lastly, do not attempt these on a pan that you aren’t confident or comfortable with. I used a brand new non stick ceramic coated GreenPan and it was perfect. I highly suggest a super non stick pan for these because of their delicate nature:)
Lastly, make sure you find little hands to help you because it’s the best way to do these! The little fingers that dipped themselves in the cocoa powder and then trailed it around my kitchen were part of those life long memories that you store away with this sweet and memorable breakfast.
Oooh adding also a note about storing these! They most obviously taste the best fresh off the pan, so if you are wanting to make ahead to store, just simply throw the batter in the blender, and then store in an airtight mason jar, and when you are ready to cook, simply finish your process!

INGREDIENTS
▢ 1 Scoop Collagen Powder
▢ 1 Cup high quality 1:1 ratio GF Flour (I only recommend Bob’s redmill 1:1 GF flour for this recipe! otherwise regular all purpose flour will also work just fine)
▢ 1 Cup Fresh Whole Milk (I got mine farm fresh the morning I used it, but any cream top or low pasture temp would be perfect)
▢ 8 Tablespoons butter melted or Ghee (again, quality here is key! Kerigold, or amish butter is recommended)
▢ 1 Teaspoon Vanilla extract
▢ 6 Large Eggs
▢ 1/2 Cup Water
▢ 1/2 Teaspoon Himalayan Salt
▢ 2 Tablespoons Coconut Sugar (can sub brown)
▢ 2 Tablespoons Cocoa Powder
▢ Optional toppings: Bacon bits, Nutella drizzle, fresh fruit, strawberries, Raspberries, Banana slices, Powdered Sugar, mini chocolate chips
INSTRUCTIONS
Heat up a non stick pan on medium to low heat over the stovetop
Melt your butter in the microwave or over the stovetop
Add all ingredients into blender, adding melted butter last/ on top so it doesn’t get chunky with the cold ingredients
Blend ingredients in a blender until smooth
Pour about 1/4 cup onto the pan and swirl around until it is thinly covering the bottom of the pan and cook on both sides for 1-3 mins or until bubbles appear and browned
Sprinkle toppings and enjoy while it’s fresh and hot!
